New City College hospitality and catering students Jenai Julien, Denique Cole Johnson and Rebekah Samuels competed against six other college and university teams, and came away with the Tilda award, winning them an amazing once in life time trip to Milan!
The NCC team competed in a live cook-off, to compete to be the best in Asian Cuisine at the prestigious Zest Quest final, which took place on Friday 7th February at Mr Todiwala's Kitchen, the signature restaurant of the Hilton London Heathrow Airport Terminal 5.
In the weeks leading up to the final, the girls worked tirelessly to perfect their 3 course meal, alongside studying towards their level 3 Professional Cookery course, under the expert guidance of their Professional Chef lecturer Jeff Mason.
As a team they have been working extremely well together and have gelled as a team, advising and helping each other on their own techniques they've picked up.
They had two hours to prepare their delicious Indonesian inspired menu, which consisted of Starter: Chicken satay, satay sauce, rice cakes, pickled cucumber; followed by Beef rendang cooked on the bone, spinach and sweetcorn puree, Indonesian rendang grilled rice and lastly, a dessert of: Traditional layer cake, roasted Tilda brown rice ice cream, Tilda brown rice pudding, seeded tuile, rice pudding foam.
They said -
Rebekah - I've learned how to extract spices properly, of course I've used them, but never used them properly. I've also come across different spices and ingredients that I've never used before, it's brilliant!
Jenai - I'm really excited. This is a once in a lifetime experience.
Jeff, our professional chef lecturer, said - They're amazing and are a really good and dedicated team to work with. They've certainly put in the effort and given this their absolute all.
